It is the longing for tastes of the season which provides the inspiration for cooking.

The environment and atmosphere help to create smell and taste memories which remain year after year and re-emerge when one encounters the tastes again.

It is often the simple and clean tastes one remembers such as the first birch sap of the year or sun-warmed strawberries with cold cream.

Cooking food together with guests is always rewarding and interesting. We can inspire each other and the conversations around food and wine in combination make the meal experience truly holistic.
