Jean-Marc began his culinary journey in his home town of Saulieu on Burgundy’s Cote d’Or in France.
He worked at 3-star Michelin restaurants in the South of France and has worked at 2* level in the UK with Michael Caines at Gidleigh Park and John Burton Race at The New Angel in Devon. He’s inspired by the classical cooking of Bearnard Loiseau, Patrick Bertron and Michael Caines, but also the food of his childhood and in particular the Poule-au-pot of his grandmother.
Jean-Marc enjoys sharing his passion with Aveqia guests, guiding them to deliver high quality plates of food worthy of a professional chef.
