Welcome to the AVEQIA Christmas Menu!

November 18 – January 31

Winter is approaching, even though autumn is still lingering with mild temperatures. But we’re getting closer to Christmas and it’s time for us to change our menu again, and this time our talented chefs offer an exciting menu filled with fine ingredients from both forest and sea. As usual, we flirt a little with the flavors and aromas of Christmas, without it becoming a “Julbord”.

Spiced rainbow trout with apple stuffed kohlrabi, potato balls, buttermilk foam and smoked egg yolk

Grilled, plum-glazed Lion’s mane mushrooms with potato bread, cheese emulsion and silver onions

Herb-roasted venison with stuffed morels, glazed beets, lingonberry pearls and green pepper sauce

Mulberry mousse with sour cream sorbet, browned butter cake, salted toffee and almond meringue
