Autumn menu 2022

Welcome to our autumn menu!

The temperatures are dropping and soon nature will start to shift its colours. This also means that harvest time is here, both in the wild and for our farmers. For this years autumn menu our chefs have placed vegetables at the centre and built a menu around them with accents of shellfish and poultry of the highest quality. A delicious feast of mushrooms, lobster, quails and for the finale; an fresh blueberry composition  with sponge cake, ice cream and a rosemary caramel sauce.

 

Butter poached lobster with dill, tomato jelly, crispy kavring and caraway emulsion

 

Mushroom tarte with chawanmushi and pea shoots

 

Tarragon stuffed quail with apple créme, glazed onion and chicken jus

 

Ice cream with fried sponge cake, raw blueberries and a rosemary caramel sauce
