Christmas-and January menu 2021/22

The autumn has flown by and Christmas is approaching quickly, and we’ve been longing for the lovely produce and delicious spices that are come with the season! We’ve stirred the pots and tested a wide range of ingredients and finally come up with a wonderful Christmas-and January menu that combines fish, meat and a lot of vegetables in a wonderful way.

Smoked char with spicy potatoes, smoked cheese crème, vendace roe and cheesy crisp bread

Ravioli filled with celeriac and hazelnuts, charred onions and truffles

Spicy venison with chewy beets, fruit leather, green peppercorn sauce and juniper emulsion

Grilled apples with shortbread, sweet vernal-grass ice-cream, spruce caramel and spicy snow
