Spring menu 2022

Spring has officially sprung and with that it’s high time we presented AVEQIA spring menu! We are all looking forward to brighter, greener days and in our spring menu our chefs have focussed on delicacies in season cooked to perfection. How about crispy deep fried mussels, white asparagus with almond foam, tender lamb and hazelnut bavaroise with rhubarb sorbet?

We look forward to cooking these delights with you!

 

Deep fried mussels with oyster emulsion, pickled fennel, herb purée and mussel foam

 

Butter baked white asparagus with almond hollandaise, crispy sourdough,  smoked char roe and onion vinaigrette

 

Grilled spring lamb with ramson dumplings, jus of braised lamb shanks, served with swiss chard and mint

 

Caramel- and hazelnut bavaroise on sablé, chocolate and yuzu crème, topped with rhubarb sorbet
