The Boyer family has produced ecologically certified wines for four generations. The siblings Fanny and Francois are currently running the production where Fanny is in charge of the winemaking and Francois is taking care of the vineyard. The location close to the Mediterranean lets the air cool down during the nights and this allows the ripening process of the grapes to slow down slightly.
Production and terroir
The wine is matured on the lees in stainless steel tanks before being bottled. This gives the wine a rounder and fuller body.
The wine has fresh notes of lemon, lillies and verbena as well as white pepper.
