For four generations, the Maillet family has run the vineyard on the beautiful slopes of the small village of Verzé in southern Burgundy. In 1999 Nicholas Maillet took over the vineyard from his father Gérard after several years of study and practice with various producers in the USA, Argentina and Spain. The original size of the Maillet vineyards was then 3.5 hectares, Nicholas proceeded to plant another 2 hectares of Chardonnay also leased 1.5 hectares to reach the current size of 7 hectares. Maillet works organically and is also certified. They only work with natural yeast. Nicholas says that the fermentation takes place between 6-10 months before it subsides. In all his wines except Pouilly-Fuissé, he avoids oak barrels.
The wine ferments in stainless steel tanks with natural yeast only for 11 months. The vines are 45 years old.
The wine is medium-bodied and healthy. It has clear notes of baked lemon with hints of brioche and low notes of vanilla.
