History
This small property is owned by Marie-Therese Bonnaire who is married to the famous wine maker Jean-Louis Bonnaire in Cramant. Paul Clouet is a so called grower’s Champagne – where the winemaker owns the vineyards from which the grapes are picked. The vineyards uesd to be part of the well-known Champagne house André Clouet before Marie-Therese decided to make her own Champagne from the grapes. The name Paul Clouet was taken from Marie-Therese’s father.
Winemaking and terroir
The grapes come from Chouilly and Bouzy, from 25 year old vines and are harvested by hand. The wine is aged on the lees for at least 24 months.
Faavour profile
The wine is round and ripe with tones of honey. The dominance of Pinot noir grapes gives it a full and creamy style.
