Rossignol – Bourgogne Rouge

History

Nicolas Rossignol was born in 1974 and was only 21 years old when he started his career as a winemaker and thus became the fifth generation Rossignol in the village of Volnay south of Beaune. After completing wine training, he worked with several reputable producers in France and abroad. In 1995 he was back in Burgundy and since then he has gradually, under his own name, expanded his vineyard area with small vineyard lots in the neighboring municipalities of Pommard, Beaune, Aloxe-Corton and Savigny. Today, Nicolas is considered to be one of the stars of Volnay with his wines known for depth and finesse without losing his origin of elegance and finesse.

Wine production and terroir

Burgundy is the antithesis of Bordeaux. The wines in Burgundy are made from just one grape and the wines are defined by their planting site and not, as in Bordeaux, by the castle name. This wine is from 20-50 years old vines and is a blend of grapes from the well-known areas of Volnay and Pommard. The soil is lime rich and well drained. The cultivation takes place ecologically and biodynamically in a modern way. The wine is stored on oak barrels and depending on the nature of the vintage, the proportion of new oak barrels is adjusted to between 0 and 50%.

Flavour profile

Soft and fruity wine, with aromas of red cherries, raspberries, strawberries and cranberries. In addition, there are hints of ripening aromas of leather and earthiness, as well as aromas of vanilla from oak barrel storage.
