Poggiotondo – Chianti ”Vigna del Conchiglie” 2011

History:

Alberto Antonini is a man who wants to work without being seen. He is relatively unknown to may despite being classed as one of the world’s top five winemakers by Decanter magazine. The most important thing for mr Antonini is not to make a mark on the wine. Many of the world’s most famous winemakers have their own style which is evident in the wine regardless of its origin. If this is experienced in Albertos wines, he’s failed he says. His focus is instead on demonstrating origin without any oak. By avoiding oak his wines show their original character. His wines have a fantastic energy, purity and focus. His biodynamic vineyard Poggiotondo is located in the northern part of Chianti, 45 min east from Pisa.

Vinification & terroir:

Only wild yeast is used and fermentation takes place on 500 liter oak barrels.

The vineyard Vigna delle Conchiglie used to be an ancient seabed and is completely filled with large sea shells – which produces an exceptional wine with both power and minerality.

Zapiain – Gure Sagardoa

Sagardoa is a Basque word that literally means apple wine. Sagardoa dates back to time immemorial in the Basque country with the first written mentions date back to the 11th century. It had special importance in the 16th century, in the Basque naval expeditions that traveled to Newfoundland, Iceland and Norway to fish for cod and hunt for whales.

There is a document from 1595 that links the surname Zapiain with the production of sagardoa. The professionalization of the sector arrived well into the 20th century. At that time, Basque cider was going through a  decline, and this is when grandfather Roxario Zapiain decided to abandon other tasks on the farm (agriculture and livestock) to dedicate himself exclusively to the making of Sagardoa. In the 1960s he built two cellars filled with chestnut barrels in which cider is still made today.

Starting in the 1980s, the new generation of the Zapiain family joined the cider house, modernizing the facilities with stainless steel tanks and the installation of temperature control. At that time, Miguel Zapiain, the first winemaker in the Basque cider sector, joined the team.

Cider making and Terroir

Zapiain Gure Sagardoa is a natural cider made in the Basque Country mainly with sharp and bitter apples. The apple is harvested in its optimal state of ripeness and is pressed to obtain the must. Once fermented, a completely natural drink is obtained, without added sulphites and with about 6% alcohol. Zapiain Gure Sagardoa is a live, unfiltered, unpasteurized and unstabilized product made under the Gorenak quality brand, which certifies the quality of the product through physical-chemical and organoleptic analysis by an independent tasting panel.

Flavour profile

Fresh apples and herbal aromas, with a well balanced acidity and bitterness. There is a presence of crisp apples, hints of citrus and pineapple, accentuated by a fine natural bubble.

Weingut Kracher – Beerenauslese Cuvée

History
At Lake Neusidler’s lake in the village of Illmitz on the border with Hungary we find a world star on the sweet wine sky. Alois Kracher, who is the father of the current winemaker Gerhard, created a new style of sweet wines, which in their entirety are based on finesse and balance where acid and sweetness are always in balance. Alois Kracher was also contributing to the great breakthrough for Austrian wines in the 1990s. Unfortunately he went away too early; already in 2007, which caused Gerhard’s son to assume responsibility for wine production, which he did with great enthusiasm.

Winemaking and terroir

Selected grapes are picked by hand and pressed gently. The wine matures with 80% in steel tank and 20% on old French oak barrels for 16 months.
The soil consists mostly of lime-rich clay.

Flavour profile

This is Germany’s oldest wine producer with monks having planted vines there already in the 1130’s. The grapes for this wine are coming from a vineyard named Steinberger that has been owned by Kloster Eberbach for 800 years. Using Riesling grapes, the vineyard is producing everything from dry wines, semi-sweet to sweet wines and Riesling is the only grape variety that be used for all these different styles.

Wine production and terroir

On the steep southern slopes, the soil is dominated by slate and gravel, which produces wines with clear minerality. This
Beerenauslese is made from a selection of the best grapes. The old
vines in combination with low harvest yields add intensity, depth and
complexity. The year 2011 offered a hot and dry spring followed by a cool summer. During September the weather was stable and remained so for most of the autumn. The conditions left a fantastic harvest which, after careful selection, yielded ripe fruit and botrytis with a fine balance between exquisite fruity, sweetness and elegant acidity.

Flavour profile

Notes of yellow apricots, apples, mango and honey. The high acidity makes it a fresh and well-balanced wine.

Bonnaire Grand Cru Vintage 2009

History
The family owned Champagne house of Bonnaire was founded in 1932 and comprises 22 acres. It is situated in the village of Cramant, a beautiful corner of Epernay in the heart of Côte des Blancs. It derives the reputation of its wines from this soil where the Chardonnay grape reigns supreme. Unsurprisingly the area is well known for its many famous Champagne houses. Out of respect for this beautiful origin, the work of the vineyard has always occupied the spirits and days of the winemakers of the house. Today’s challenge is in how to grow grapes and how soils are treated throughout the year. Vineyard management is thus at the center of all attention.

Vinification & Terroir
The wine is matured on stainless steel tanks for 9 months. The wine then goes through a secondary fermentation and matured for 72 months on the lees.

Flavour profile
With grapes (100% Chardonnay) from one of the best Chardonnay villages, this Champagne is 100% crispy with a lovely concentration. Clear tones of lemon, yellow apples along with roasted brioche make this Champagne exceptionally good as an aperitif alternatively with seafood entrees.

Expression blanc

History

The Boyer family has produced ecologically certified wines for four generations. The siblings Fanny and Francois are currently running the production where Fanny is in charge of the winemaking and Francois is taking care of the vineyard. The location close to the Mediterranean lets the air cool down during the nights and this allows the ripening process of the grapes to slow down slightly.

Production and terroir

The wine is matured on the lees in stainless steel tanks before being bottled. This gives the wine a rounder and fuller body.

Flavour profile

The wine has fresh notes of lemon, lillies and verbena as well as white pepper.

Exton park brut

History

A lot has happened since the vineyards were planted with the same grapes as in Champagne in 2003. Mr. Malcolm Isaac acquired the property in 2009 and has made many improvememtns since then. Today Exton Park is producing some of the best sparkling wines in the UK. All buildings are made from organic materials and great effort is put into making the winemaking process as sustainable as possible.

Winemaking & terroir

The traditional method (same as in Champagne) is used to produce the wines from Exton Park and they are resting on the lees for 24 months.  The terroir in Hmpshire is similar to the one in Champagne due to the same piece of land, rich in limestone, that stretches from Champagne and under the English Channel.

Flavour profile

This is a wine with good freshness and acidity with tones of citrus, pear and minerality but also a toasty richness. The mousse is elegant and makes this a gastronomic wine that is very pleasant to drink.

History

For three generations the Kracher family has led the way in the Seewinkel, that corner of Austria to the east of Lake Neusiedl, just an hour’s drive from Vienna. It was Alois Kracher Senior, back in the 1950s and ‘60s who first realised the potential of the area for quality wine growing. Then in 1991, Alois Junior (Luis) set the world on fire with his ‘new’ style of dessert wine, focussing on finesse and balance more than just outright sweetness. Now his son Gerhard manages the impressive heritage of high class wines in the sweet style.

Winemaking and terroir

This is a wine with 140grams of sugar but with high a cidity which creates an excellent balance. The wine feels fresh and light despite the sweetness. It is matured in new oak barrels for 6 months.

The Seewinkel is an area in eastern Austria, approximately 20 km wide, along the eastern shore of Lake Neusiedl. It is an immense plain, with thousands of shallow lakes scattered throughout it. Most of these lakes, including the largest, Lake Neusiedl, are less than two metres deep. The continental  climate brings hot dry summers and very cold winters and it is these extremes that create a unique climate for viticulture. During cool autumn evenings, evaporation from the numerous lakes creates heavy fog, which covers the area until midday when the still strong sunlight burns through. This helps to create the necessary conditions for the formation of the noble rot, botrytis cinerea, that is the key to the immense concentration, sweetness and complexity of the greatest sweet wines produced here.

Kracher Beerenauslese Zweigelt offers deep flavour with notes of raspberry, white pepper, strawberries, red currant and cherries.

Cuvée Beerenauslese Kracher

Unfortunately he went away too early; already in 2007, which caused Gerhard’s son to assume responsibility for wine production, which he did with great fury.

The grapes that are procured must be hand-picked and of the same quality that are used in their own wines. After harvest the grapes are taken to the winery where all wines are produced, stored and bottled. Domaine Bzikot Puligny-Montrachet

History
Sylvaine Bzikot, who owns and operates Domaine Bzikot at the present time, had a handsome grandfather who came to the village of Puligny-Montrachet in Burgundy just before the outbreak of World War II. Over the following generations, the family proceeded to acquire 4 hectares of vineyards in the area along with some 9 hectares in Burgundy. Sylvaine took over the vineyard in 1991 and works to create elegance in all her wines. She does this  through high quality in the grapes together with careful management of the wines. An important component for Sylvaine is to use new oak barrels restrictively so that the wines do not pick up too much flavor from the barrels.

Vinification & Terroir
The wine matures for 12 months on oak barrels of which only 20% are new. This gives an elegance and ease to the wines with limited taste and aroma from oak barrels where the fruit from the grape takes up more space.
The soil has high levels of lime.

Flavour Profile
The wine has clear notes of apple and elegant buttery tones and lots of minerality. The wine has a long aftertaste.
