AVEQIAs Christmas Menu 2018
It’s that time of the year again! Candlelight, warming open fires and the sun setting in the early afternoon… It’s the perfect time to gather in the warmth around the simmering pots at AVEQIA, and the chefs are inviting you to an experience where the classic Swedish Christmas flavors are presented in new inspiring ways.
Saffron vichyssoise with smoked trout roe, pickled potato and award-winning cheese “Old Pär”
We start this year’s Christmas menu with a creamy vichyssoise foam, seasonally flavoured with saffron. It’s served with a thin crisp of filo pastry topped with a variety of savoury items, from trout roe that we cold smoke in the kitchen, to slices of almond potato pickled in a vodka-laced brine and the award-winning Swedish cheese “Old Pär”.
Cured herring with smoked cauliflower cream, tomato emulsion and winter vinaigrette
For the second course we cure herring, creating a mix between the spanish boquerones and Swedish Christmas herring. It is served with a fresh tomato emulsion and a creamy cauliflower purée. To complete the dish we make a curd from sour cream, and a bright green winter vinaigrette with apple, lovage and horseradish.
Spice-fried duck with a cream of swede, crunchy hazelnuts and flower sprouts
For our main course we serve duck breasts, rubbed in spices and glazed with plum, orange and ginger. We serve it with a classic “duck à l’orange” sauce that is given a Christmas touch of allspice, a smooth swede purée and a buttery crisp of fried potatoes, roasted hazelnuts and flower sprouts.
Christmas-flavoured almond cake with dulce de leche ice-cream, caramelized popcorn and crunchy apple
The finale of this year’s Christms menu is a flurry of typical Swedish Christmas flavours. We make a soft version of the traditional Swedish gingerbread bisquit with almonds. It is served with a home-made ice-cream of Tahiti vanilla and dulce de leche with a touch of salt. We make pearls of fresh apple to add a pleasant tanginess and finish with caramelized popcorn for a nice crunch. Bon appétit!
