Har du ingen \u00e5ngugn eller sous vide s\u00e5 kan du \u00e5nga sparrisen i vanlig ugn, d\u00e5 med en pl\u00e5t med vatten under sparrisen (ugnstemp 150\u00b0C). Vi kombinerar detta med en fr\u00e4sch yuzumajonn\u00e4s, mj\u00e4lla kammusslor och poppande forellrom. R\u00e4cker till 8-10 portioner som f\u00f6rr\u00e4tt eller ca 4-5 portioner som varmr\u00e4tt.<\/p>\n<h4>Inkokt sparris<\/h4>\n<ul>\n<li>10 st Vita sparrisar<\/li>\n<li>1 msk Socker<\/li>\n<li>1 tsk Salt<\/li>\n<li>2 dl Vatten<\/li>\n<li>1 st Citron<\/li>\n<li>1 dl Sur\u00f6l<\/li>\n<\/ul>\n<p>Skala sparrisen och l\u00e4gg i vakuump\u00e5se. Sjud vatten, salt och socker, tills\u00e4tt sur\u00f6len och citronjuicen. Kyl ner v\u00e4tskan i ett isbad och h\u00e4ll sedan v\u00e4tskan i vakuump\u00e5sen och f\u00f6rslut. \u00c5nga sparrisen p\u00e5 80\u00b0C i ca. 15 minuter (beroende p\u00e5 storlek). Dela sedan sparrisen enligt instruktion och spara lagen till senare.<\/p>\n<h4>Gl\u00f6dbakad Purjol\u00f6k<\/h4>\n<ul>\n<li>1 st Purjol\u00f6k<\/li>\n<li>50 g Sm\u00f6r Arla\u00ae<\/li>\n<li>2 kvistar Timjan<\/li>\n<li>\u2013 Citronskal<\/li>\n<li>\u2013 Espelettepeppar<\/li>\n<\/ul>\n<p>Tv\u00e4tta och dela purjol\u00f6ken p\u00e5 l\u00e4ngden. Baka purjol\u00f6ken p\u00e5 130\u00b0C i 30 minuter.<\/p>\n<p>Grilla sedan purjol\u00f6ken h\u00e5rt runt om. Sm\u00e4lt sm\u00f6ret med Espelette-pepparn och timjan i en kastrull. Sl\u00e5 sm\u00f6ret \u00f6ver purjol\u00f6ken och riv citronskalet \u00f6ver.<\/p>\n<h4>Majonn\u00e4s<\/h4>\n<ul>\n<li>1 st \u00c4gg<\/li>\n<li>2 msk Yuzu<\/li>\n<li>1\/2 st Citron<\/li>\n<li>1 tsk Dijonsenap<\/li>\n<li>2 dl Matolja<\/li>\n<\/ul>\n<p>Mixa \u00e4gg, citronjuice, dijonsenap och Yuzu med en stavmixer. H\u00e4ll i oljan i en tunn str\u00e5le till en tjockare konsistens uppst\u00e5r. Smaka av med salt.<\/p>\n<h4>\u00d6vrigt<\/h4>\n<ul>\n<li>50 g Forellrom<\/li>\n<li>5 st Kammussla<\/li>\n<li>5 Kvistar Dill<\/li>\n<li>5 kvistar k\u00f6rvel<\/li>\n<li>1\/2 dl Purjol\u00f6ksolja<\/li>\n<\/ul>\n<p>L\u00e4gg forellrom i en spritsp\u00e5se. Dela kammusslorna enligt instruktion och l\u00e4gg p\u00e5 en pl\u00e5t. Salta l\u00e4tt och st\u00e4ll kallt. Plocka dillen och k\u00f6rveln ner i kallt vatten.
