Sedan i kombinationen med den s\u00f6tsyrliga rabarbern, den fluffiga munken och vaniljkr\u00e4men s\u00e5 har vi h\u00e4r en riktig kioskv\u00e4ltare till efterr\u00e4tt. Vi lovar att du och dina g\u00e4ster kommer att gilla den h\u00e4r desserten!<\/p>\n<p>R\u00e4cker till 8-10 portioner<strong><br \/>\n<\/strong><\/p>\n<p>\u00c5ngad Rabarber<\/p>\n<ul>\n<li>300 g Rabarber<\/li>\n<li>60 g Socker<\/li>\n<li>200 g Vatten<\/li>\n<li>1 tsk F\u00e4nk\u00e5lsfr\u00f6n<\/li>\n<li>1 st Citron<\/li>\n<\/ul>\n<p>Skala rabarbern, spara renset. Sjud skalen i sockerlagen i 3 min, tills\u00e4tt citronsaften, sila av och l\u00e5t lagen svalna. Sk\u00e4r rabarben i kuber och vakuumpacka med den smaksatta sockerlagen. \u00c5nga rabarbern i \u00e5ngugn p\u00e5 80\u00b0C i 3-5 min beroende p\u00e5 storlek. Tag ut och l\u00e5t st\u00e5 framme.<\/p>\n<p>*har du ingen \u00e5ngugn s\u00e5 st\u00e4ller du helt enkelt in en ugnsfast form med vatten i botten p\u00e5 ugnen. *Har du inte n\u00e5gon vakuummaskin s\u00e5 l\u00e4gg rabarbern och lagen i en plastp\u00e5se, sug ut s\u00e5 mycket luft du kan och f\u00f6rslut.<\/p>\n<h4>Friterad Munk med f\u00e4nk\u00e5l<\/h4>\n<ul>\n<li>25 g J\u00e4st<\/li>\n<li>100 g Mj\u00f6lk Arla\u00ae<\/li>\n<li>75 g Sm\u00f6r Arla\u00ae<\/li>\n<li>30 g Socker<\/li>\n<li>280 g Vetemj\u00f6l<\/li>\n<li>1 st \u00c4gg<\/li>\n<li>50 g F\u00e4nk\u00e5lssocker<\/li>\n<\/ul>\n<p>V\u00e4rm mj\u00f6lken till 37\u00b0C. Vispa ner j\u00e4st och blanda resterande ingredienser i en deg-blandare. K\u00f6r i 10 min till en smidig och glansig deg. Kavla ut degen 15 mm tjock. Stansa ut rundlar. L\u00e5t j\u00e4sa i 45 min. Fritera sedan p\u00e5 170\u00b0C och krydda slutligen munkarna med f\u00e4nk\u00e5lssocker.<\/p>\n<h4>Brynt sm\u00f6rglass<\/h4>\n<ul>\n<li>500 g Mj\u00f6lk Arla\u00ae<\/li>\n<li>120 g Socker (I)<\/li>\n<li>50 g Vatten<\/li>\n<li>80 g Sm\u00f6r Arla\u00ae<\/li>\n<li>20 g Socker (II)<\/li>\n<li>120 g \u00c4ggula<\/li>\n<li>20 g Mj\u00f6lkpulver<\/li>\n<\/ul>\n<p>V\u00e4rm upp mj\u00f6lken och g\u00f6r en karamell av sockret (120g &#8211; I) och vattnet. Tills\u00e4tt den varma mj\u00f6lken i karamellen och sjud mj\u00f6lken tills karamellen l\u00f6st upp sig. Bryn sm\u00f6ret tills gyllenbrunt och tills\u00e4tt mj\u00f6lkpulvret. Vispa ihop socker (20g-II) och \u00e4ggula. H\u00e4ll den varma mj\u00f6lkblandningen \u00f6ver \u00e4ggblandningen och h\u00e4ll sedan tillbaka i samma kastrull och v\u00e4rm upp blandningen till 85\u00b0C under konstant omr\u00f6rning. Sila v\u00e4tskan \u00f6ver det brynta sm\u00f6ret. Kyl och k\u00f6r slutligen den kalla v\u00e4tskan i glassmaskin. F\u00f6rvara i frys till ca 10 min innan servering.<\/p>\n<h4>Creme P\u00e2tiss\u00e9rie<\/h4>\n<ul>\n<li>200 g Mj\u00f6lk Arla\u00ae<\/li>\n<li>1\/2 st Vaniljst\u00e5ng<\/li>\n<li>50 g \u00c4ggula<\/li>\n<li>60 g Socker<\/li>\n<li>15 g Maizena<\/li>\n<li>10 g Sm\u00f6r Arla\u00ae<\/li>\n<\/ul>\n<p>Sjud upp mj\u00f6lken med den urskrapade vaniljst\u00e5ngen. Vispa ihop \u00e4ggula, socker och maizena. H\u00e4ll den smaksatta mj\u00f6lken (tag bort vaniljst\u00e5ngen) \u00f6ver \u00e4ggblandningen och vispa ihop. H\u00e4ll sedan v\u00e4tskan tillbaka och vispa under konstant omr\u00f6ring under medelv\u00e4rme tills f\u00f6rsta bubblan har kommit. Sila sedan vaniljkr\u00e4men \u00f6ver sm\u00f6ret, vispa ihop och st\u00e4ll sedan i kyl.<\/p>\n<h4>Garnityr<\/h4>\n<ul>\n<li>100 g Rabarber<\/li>\n<li>5 kvistar F\u00e4nk\u00e5lsdill<\/li>\n<li>50 g Bovete<\/li>\n<\/ul>\n<p>Hyvla rabarbern tunt p\u00e5 mandolin och strimla rabarbern p\u00e5 l\u00e4ngden i tunna t\u00e4ndstickor och sk\u00f6lj i vatten. Plocka ner f\u00e4nk\u00e5lsdillen i isvatten.
