H\u00e4r hittar du ett recept som l\u00e5ter skreien ta plats j\u00e4mte enkla tillbeh\u00f6r i form av purjol\u00f6k, ett hemgjort noriflarn och en delikat ostronemulsion. Vi serverade den h\u00e4r r\u00e4tten som en f\u00f6rr\u00e4tt &#8211; d\u00e5 till ca 8 portioner med det h\u00e4r receptet.<\/p>\n<h4>Gravad Skrei<\/h4>\n<ul>\n<li>300 g Skrei<\/li>\n<li>30 g Socker<\/li>\n<li>60 g Salt<\/li>\n<li>\u00bd Citron<\/li>\n<\/ul>\n<p>Putsa Skreifil\u00e9n och sk\u00e4r enligt anvisning. Placera fisken p\u00e5 en pl\u00e5t och str\u00f6 \u00f6ver gravningsmixen (saltet och sockret), gnid in den l\u00e4tt och zesta citronen \u00f6ver fisken. Sk\u00e4r upp fisken enligt instruktion och r\u00f6k den sedan med r\u00f6kpistolen.<\/p>\n<h4>Noriflarn<\/h4>\n<ul>\n<li>100 g Mandelpotatis<\/li>\n<li>\u2013 Noripulver<\/li>\n<\/ul>\n<p>Skala och koka potatisen tills den \u00e4r helt mjuk, sila och spara v\u00e4tskan. Mixa potatis med litet av kokvattnet till ett l\u00f6st mos och tills\u00e4tt noripulvret. H\u00e4ll ut p\u00e5 silikonmatta, bred ut tunt och torka i ugn p\u00e5 130\u00b0C till semitorr. Fritera.<\/p>\n<h4>Ostronkr\u00e4m<\/h4>\n<ul>\n<li>1 st Ostron<\/li>\n<li>1 st \u00c4ggvita<\/li>\n<li>2 dl Rapsolja<\/li>\n<li>\u00bd Citron<\/li>\n<li>\u2013 Salt<\/li>\n<\/ul>\n<p>\u00d6ppna ostronet enligt instruktion och mixa \u00e4ggvitan och ostronen. Droppa sedan f\u00f6rsiktigt ner oljan i blandningen medan du mixar tills det blir en sl\u00e4t kr\u00e4m, smaka upp med salt och citronjuice.<\/p>\n<h4>K\u00e4rnmj\u00f6lksdressing<\/h4>\n<ul>\n<li>1 dl K\u00e4rnmj\u00f6lk<\/li>\n<li>\u00bc Citronjuice<\/li>\n<li>25 g Pepparrot<\/li>\n<li>25 g Cr\u00e8me Fraiche<\/li>\n<\/ul>\n<p>Mixa pepparroten med alla ingredienserna blanda alla ingrediensen och l\u00e5t dra i 20 min i kylsk\u00e5pet, sila och smaka upp med salt.<\/p>\n<h4>Bakad purjol\u00f6k och syltad l\u00f6k<\/h4>\n<ul>\n<li>2 Purjol\u00f6kar<\/li>\n<li>25 g Sm\u00f6r Arla\u00ae<\/li>\n<li>3 kvistar Backtimjan<\/li>\n<li>\u00bd Citron<\/li>\n<li>10 st Syltl\u00f6kar<\/li>\n<li>1 dl Jalape\u00f1olag (1-2-3 lag uppsmakad med Jalapeno)<\/li>\n<\/ul>\n<p>Sk\u00e4r purjol\u00f6k i mindre bitar och placera i en vakuump\u00e5se med sm\u00f6r, citron och timjan. \u00c5nga i 20 min i 100\u00b0C \u00e5nga. Dela l\u00f6karna p\u00e5 l\u00e4ngden och \u00e5nga i 5 minuter. Skala l\u00f6karna och plocka is\u00e4r dem i lameller och l\u00e4gg i jalape\u00f1olagen.<\/p>\n<h4>Garnityr<\/h4>\n<ul>\n<li>5 kvistar Dill<\/li>\n<li>\u00bd dl Purjol\u00f6ksolja<\/li>\n<li>\u00bd Granny Smith \u00e4pple<\/li>\n<li>1 msk Jalape\u00f1olag<\/li>\n<\/ul>\n<p>Hyvla \u00e4pplet tunt p\u00e5 en mandolin och vakuumpacka med jalape\u00f1olagen. Plocka dillen ner i isvatten och finhacka kvistarna.
