Om du vill komma litet l\u00e4tt undan s\u00e5 ber du din fiskhandlare byxa g\u00f6sen \u00e5t dig s\u00e5 du bara beh\u00f6ver baka fisken innan servering. Den goda svampconsomm\u00e9n serverar du med f\u00f6rdel vid bordet.&nbsp; <strong><br \/>\n<\/strong><\/p>\n<p>8 portioner som f\u00f6rr\u00e4tt eller ca 4 portioner som varmr\u00e4tt<\/p>\n<h4>Sojabakad G\u00f6s och R\u00e5r\u00e4kor<\/h4>\n<ul>\n<li>400 g G\u00f6sfil\u00e9<\/li>\n<li>1 dl Soja<\/li>\n<li>2 dl Vatten<\/li>\n<li>30 R\u00e5r\u00e4kor (k\u00f6ps enklast frysta i asiatiska butiker, kan ers\u00e4ttas med ett mindre antal havskr\u00e4ftor)<\/li>\n<\/ul>\n<p>Blanda samman soja och vatten. Byxa (sk\u00e4r bort mittraden med sm\u00e5ben i fil\u00e9n, s\u00e5 att det blir ett snitt och fil\u00e9n liknar en byxa) din g\u00f6s och sk\u00e4r i fina portionsbitar, l\u00e4gg ner i sojablandningen. H\u00e4ll \u00f6ver vatten s\u00e5 det t\u00e4cker och tills\u00e4tt shiitake, timjan, vitl\u00f6k. L\u00e5t koka ned tills 5 dl kvarst\u00e5r (v\u00e4tskan som kvarst\u00e5r ska dubblas i samma takt som receptet dubblas). Sila av i en kastrull och smaka av med soja, miso, \u00e4ttika och om det beh\u00f6vs lite salt. H\u00e5ll varm till servering.<\/p>\n<h4>Silverl\u00f6k och Syltl\u00f6k<\/h4>\n<ul>\n<li>500 g Silverl\u00f6kar<\/li>\n<li>2 msk Sm\u00f6r Arla\u00ae<\/li>\n<li>10 Syltl\u00f6kar<\/li>\n<li>1 msk Maltvin\u00e4ger<\/li>\n<li>2 msk Socker<\/li>\n<li>3 msk \u00d6l<\/li>\n<\/ul>\n<p>Dela silverl\u00f6karna (l\u00e5t skalet vara kvar) och stek med snittytan ner i sm\u00f6r p\u00e5 medelv\u00e4rme tills de \u00e4r mjuka och gyllene till f\u00e4rgen. Dela ner l\u00f6ken i blad och blanda med maltvin\u00e4ger, socker och \u00f6l i en kastrull. Koka upp och l\u00e5t l\u00f6kbladen svalna i lagen. Dela syltl\u00f6karna p\u00e5 l\u00e4ngden, \u00e5nga 2 minuter, skala och plocka ner i pickleslagen. L\u00e5t st\u00e5 till servering.<\/p>\n<h4>Kavringkrisp<\/h4>\n<ul>\n<li>25 g Kavring<\/li>\n<li>2 g Kummin<\/li>\n<li>2 g F\u00e4nk\u00e5lsfr\u00f6n<\/li>\n<\/ul>\n<p>Hyvla kavringen tunt p\u00e5 en mandolin. L\u00e4gg p\u00e5 silikonmatta p\u00e5 en pl\u00e5t eller ugnsfast form. Mixa kryddorna i en kryddmixer. Str\u00f6 kryddorna \u00f6ver kavringen, salta l\u00e4tt och ringla \u00f6ver lite olja. Torka i ugn p\u00e5 140\u00b0C (ca 15-30 min) tills de \u00e4r gyllenbruna och krispiga.<\/p>\n<h4>R\u00f6kt Gr\u00e4sl\u00f6ksolja<\/h4>\n<ul>\n<li>50 g Gr\u00e4sl\u00f6k<\/li>\n<li>200 ml Matolja<\/li>\n<\/ul>\n<p>Koka upp en kastrull med v\u00e4lsaltat vatten. Doppa gr\u00e4sl\u00f6ken i det kokande vattnet i 2 sekunder och l\u00e4gg i en kannmixer eller matberedare. K\u00f6r tillsammans med oljan tills du f\u00e5r en sl\u00e4t gr\u00f6n olja. R\u00f6k med r\u00f6kpistol i en plastl\u00e5da med t\u00e4ttsittande lock. *Om du inte har en r\u00f6kpistol kan du hoppa \u00f6ver detta steg.<\/p>\n<h4>Garnityr och grillad Broccoli<\/h4>\n<ul>\n<li>250 g Broccoli<\/li>\n<li>\u00bc Citron<\/li>\n<li>1\/2 dl Gr\u00e4sl\u00f6ksolja<\/li>\n<li>100 g Forellrom<\/li>\n<li>1\/5 ask Buskkrasse<\/li>\n<li>1\/5 ask Vattenkrasse<\/li>\n<\/ul>\n<p>Kvarta broccolin p\u00e5 l\u00e4ngden och grilla h\u00e5rt p\u00e5 grillen eller i grillpanna. Portionera s\u00e5 att alla f\u00e5r tv\u00e5 bitar broccoli var. L\u00e4gg i en bunke eller p\u00e5 en liten pl\u00e5t och blanda v\u00e4l med salt, peppar, olivolja och citron. H\u00e4ll gr\u00e4sl\u00f6ksoljan i en beh\u00e5llare med v\u00e4l tillslutande lock och r\u00f6k med en r\u00f6kpistol. Fyll upp forellrommen i en spritsp\u00e5se. Plocka buskkrassen och vattenkrassen i isvatten s\u00e5 de h\u00e5ller sig krispiga till serveringen.<\/p>\n<h4>Vid servering<\/h4>\n<p>Arrangera alla ingredienserna p\u00e5 tallriken (anv\u00e4nd g\u00e4rna en djup tallrik) utom consomm\u00e9n.
