H\u00e4r i ett perfekt \u00e4ktenskap med fina betor av olika slag, sotad rotselleri och sedan binder vi ihop r\u00e4tten med en smarrig tryffelmajonn\u00e4s. Slutligen toppar vi v\u00e5ra Suovas med kavringskrisp, tunt skivade champinjoner och r\u00e5r\u00f6rda lingon. Om du inte kan f\u00e5 tag i Suovas s\u00e5 kan du ers\u00e4tta den med renskav.<\/p>\n<p>8 portioner som f\u00f6rr\u00e4tt eller ca 4 portioner som varmr\u00e4tt<\/p>\n<h4>Rostade korngryn<\/h4>\n<ul>\n<li>50 g\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Korngryn<\/li>\n<li>4 dl\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Vatten<\/li>\n<li>5 g\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Salt<\/li>\n<\/ul>\n<p>L\u00e4gg korngrynen p\u00e5 en pl\u00e5t eller i en ugnsfast form och rosta i ugn p\u00e5 200 \u00b0C i ca 20 min tills de har f\u00e5tt ordentligt med f\u00e4rg. H\u00e4ll sedan korngrynen i en kastrull och koka i saltat vatten ca 15 min tills kornen \u00e4r helt mjuka. Sila av och l\u00e5t st\u00e5.<\/p>\n<p>Betor<\/p>\n<ul>\n<li>1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Stor r\u00f6dbeta<\/li>\n<li>2\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Sm\u00e5 r\u00f6dbetor<\/li>\n<li>2\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Sm\u00e5 gulbetor<\/li>\n<\/ul>\n<p>Koka de stora r\u00f6dbetorna i saltat vatten tills de \u00e4r mjuka rakt igenom. Skiva de sm\u00e5 betorna tunt p\u00e5 mandolin och stansa ut cirklar (se bild). Har du ingen stans, sk\u00e4r ner de tunna skivorna i mindre bitar. L\u00e4gg i kallt vatten.<\/p>\n<h4>Sotad Rotselleri<\/h4>\n<ul>\n<li>150 g\u00a0\u00a0\u00a0\u00a0 Rotselleri<\/li>\n<\/ul>\n<p>Skiva rotsellerin tunt p\u00e5 mandolin och sk\u00e4r sedan skivorna i brunoise (kuber p\u00e5 1\u00d71 mm). L\u00e4gg p\u00e5 en pl\u00e5t och sota med gasbr\u00e4nnare s\u00e5 sellerin f\u00e5r ordentligt med f\u00e4rg. Skiva champinjonerna tunt g\u00e4rna p\u00e5 mandolin. Skala schalottenl\u00f6ken och skiva \u00e4ven den tunt p\u00e5 tv\u00e4ren p\u00e5 en mandolin. L\u00e4gg l\u00f6kringarna i kallt vatten. Sm\u00e4lt sm\u00f6ret och bryn det tills det f\u00e5r en gyllenbrun f\u00e4rg, tills\u00e4tt lingonen. Skiva kavringen i tunna tunna flarn, fritera i frit\u00f6s 130\u00b0C tills flarnen \u00e4r krispiga. Har du ingen frit\u00f6s, stek flarnen i rikligt med olja i en het panna.
