Lyft ur n\u00e4sslorna med en h\u00e5lslev eller sila ner buljongen i en bunke (den ska \u00e5teranv\u00e4ndas!). Sk\u00f6lj n\u00e4sslorna snabbt i kallt vatten s\u00e5 de beh\u00e5ller den gr\u00f6na f\u00e4rgen. Hacka schalottenl\u00f6ken och fr\u00e4s den i sm\u00f6ret utan att den f\u00e5r f\u00e4rg. Tills\u00e4tt mj\u00f6let och l\u00e5t det steka n\u00e5gon minut. H\u00e4ll p\u00e5 1\/4 av buljongen och r\u00f6r ut redningen ordentligt. Tills\u00e4tt sedan resten av buljongen och l\u00e5t koka ner n\u00e5got. Tills\u00e4tt gr\u00e4dden och l\u00e5t koka tills velout\u00e9n tjocknar n\u00e5got. Mixa sl\u00e4tt med n\u00e4sslorna och smaka av med salt och nymalen svartpeppar.
