B\u00e5de citronmajonn\u00e4s och Hollandaise \u00e4r ju fantastiskt goda till sparris, testa g\u00e4rna att smaks\u00e4tta s\u00e5serna ytterligare, kanske k\u00f6rvel i hollandaisen eller chili i majonn\u00e4sen.<\/p>\n<h4>Grundrecept \u2013 tillagning av vit sparris<\/h4>\n<ul>\n<li>6 sparrisar, g\u00e4rna extra tjocka \u2013 AAA<\/li>\n<li>10 g salt<\/li>\n<li>30 g socker<\/li>\n<li>15 g sm\u00f6r<\/li>\n<li>1\/4 citron<\/li>\n<li>2.5 dl vatten<\/li>\n<\/ul>\n<p>Skala sparrisen omsorgsfullt med en potatisskalare\u2013 det viktigt att allt skal f\u00f6rsvinner. Sparrisen \u00e4r \u00f6mt\u00e5lig s\u00e5 ha den g\u00e4rna liggandes p\u00e5 sk\u00e4rbr\u00e4dan n\u00e4r du skalar och h\u00e5ll f\u00f6rsiktigt i toppen som \u00e4r den enda delen som inte ska skalas. Sk\u00e4r av ca 3 cm av nederdelen eftersom den brukar vara torr och tr\u00e4ig. Blanda socker, salt, sm\u00f6r, vatten och saften av citronen i en vakuump\u00e5se. L\u00e4gg i sparrisen och f\u00f6rslut p\u00e5sen. Tillaga i \u00e5ngugn (eller sous-vide) till sparrisen fortfarande \u00e4r sp\u00e4nstig, ca 30 minuter p\u00e5 85\u00b0C. Om du inte har en \u00e5ngugn eller sous-vide s\u00e5 rekommenderar vi att du blandar till lagen i en grund och vid kastrull. L\u00e4gg i sparrisen, v\u00e4rm upp lagen l\u00e5ngsamt och l\u00e5t sparrisen g\u00e5 klart i lagen (obs, l\u00e5g-medium v\u00e4rme \u00e4r det som g\u00e4ller h\u00e4r) i ca 30 minuter.<\/p>\n<p>Du kan v\u00e4lja att servera din lyxiga sparris antingen varm eller kall, h\u00e4r kommer \u00e4ven recept p\u00e5 tv\u00e5 klassiska s\u00e5ser som passar utomordentligt till godsakerna!<\/p>\n<h4 dir=\"auto\">Citronmajonn\u00e4s \u2013 v\u00e4ldigt gott till kall sparris<\/h4>\n<ul>\n<li dir=\"auto\">1 \u00e4ggula<\/li>\n<li dir=\"auto\">1 tsk dijonsenap<\/li>\n<li dir=\"auto\">1 tsk citronsaft<\/li>\n<li dir=\"auto\">2 dl matolja<\/li>\n<\/ul>\n<div dir=\"auto\">Vispa ihop \u00e4ggulan med senap och citronsaft i en bunke. Vispa ner oljan sakta, i en tunn str\u00e5le under konstant vispande. N\u00e4r majonn\u00e4sen tjocknat till \u00f6nskad konsistens, smaka av med salt och eventuellt mer senap och citronjuice. Om du f\u00f6r \u00f6ver majonn\u00e4sen till en spritsp\u00e5se kan du enkelt g\u00f6ra en vacker uppl\u00e4ggning p\u00e5 tallrik med sm\u00e5 klickar av majonn\u00e4s till sparrisen. Dekorera med l\u00f6jrom och buskkrasse!<\/div>\n<div dir=\"auto\"><\/div>\n<h4 dir=\"auto\">Hollandaises\u00e5s \u2013 ljuvlig till varm sparris<\/h4>\n<ul>\n<li dir=\"auto\">200 g sm\u00f6r<\/li>\n<li dir=\"auto\">3 \u00e4ggulor<\/li>\n<li dir=\"auto\">3 msk vatten<\/li>\n<li dir=\"auto\">1\/2 citron<\/li>\n<\/ul>\n<div dir=\"auto\">Sm\u00e4lt sm\u00f6ret sakta och varmh\u00e5ll det p\u00e5 ca 50 grader. Koka upp en liten kastrull med vatten, s\u00e4nk sedan v\u00e4rmen tills vattnet bara sjuder.<\/div>\n<div dir=\"auto\">Vispa \u00e4ggulor och vatten skummigt i en rostfri bunke. S\u00e4tt bunken \u00f6ver kastrullen med det sjudande vattnet och vispa n\u00e5gra minuter tills blandningen tjocknat. Tills\u00e4tt sm\u00f6ret sakta under vispning \u2013 undvik att h\u00e4lla ner v\u00e4tskan som samlats under fettet i sm\u00f6ret. Smaka av med citron och salt.
