Sila av vattnet och mixa stammarna och persiljan tillsammans med citronjuice, soja, jalape\u00f1o och salt. Mixa till en sl\u00e4t cr\u00e8me, sp\u00e4 med kallt vatten f\u00f6r att f\u00e5 cr\u00e8men att g\u00e5 ihop.<\/p>\n<p><strong>Hummervin\u00e4grett <\/strong><\/p>\n<ul>\n<li>Hummerskrov<\/li>\n<li>\u00bd \u00a0dl\u00a0 Kallpressad rapsolja<\/li>\n<li>2 msk Champagnevin\u00e4ger<\/li>\n<li>Salt och peppar<\/li>\n<\/ul>\n<p>Rosta hummerskroven p\u00e5 180\u00b0C i ca 15 minuter. L\u00e4gg ner skroven i en kastrull och t\u00e4ck med kallt vatten. L\u00e4gg i spritsp\u00e5se.<\/p>\n<p>Hyvla k\u00e5lrabbin tunt p\u00e5 mandolin. Stansa ut enligt instruktion och l\u00e4gg skivorna i vakuump\u00e5se tillsammans med pickleslag och l\u00e5t vila p\u00e5 b\u00e4nken. H\u00e4ll av v\u00e4tskan och l\u00e4gg ut k\u00e5lrabbin p\u00e5 en torr duk.
