Karamellisera tillsammans med Voatsiperiferypeppar ordentligt i kastrull. Tills\u00e4tt r\u00e5socker och Sherryvin\u00e4ger. Koka ur vin\u00e4gern, tills\u00e4tt kycklingbuljong och kombu. Reducera till h\u00e4lften. Sila av och tills\u00e4tt madeiravin. L\u00e5t s\u00e5sen sjuda till servering och tills\u00e4tt ramsl\u00f6kskapris. Smaka av med salt och vin\u00e4ger.<\/p>\n<h4>Tomatemulsion<\/h4>\n<ul>\n<li>10 st Tomater<\/li>\n<li>1 st \u00c4ggula<\/li>\n<li>150 g Rapsolja<\/li>\n<li>3 droppar Tabasco<\/li>\n<li>5 droppar Worcestershire s\u00e5s<\/li>\n<\/ul>\n<p>R\u00e5safta tomaterna och koka ner tomatjuicen till 5% \u00e5terst\u00e5r. Kyl ner och mixa ihop med \u00e4ggula, Tabasco och Worcestershires\u00e5s och salt. Mixa i rapsolja och smaka av med salt.<\/p>\n<h4>M\u00e4rgsm\u00f6r<\/h4>\n<ul>\n<li>50 g M\u00e4rg<\/li>\n<li>70 g Sm\u00f6r<\/li>\n<li>5 kvist Timjan<\/li>\n<li>3 st Vitl\u00f6ksklyftor<\/li>\n<\/ul>\n<p>Sm\u00e4lt m\u00e4rg och tills\u00e4tt sm\u00f6r, timjan och vitl\u00f6k.
