Place the fish skin down on a tray with a silicone sheet and salt lightly. Grill the butter by melting it and dipping a piece of burning charcoal into it. (For an easier recipe, use the butter without grilling it). Heat the butter with Espelette pepper and thyme. Before serving, brush the fish with the grilled butter and turn the fish skin side up. Bake in the oven at 105\u00b0C for 6 minutes and remove the skin gently.<\/p>\n<p>&nbsp;<\/p>\n<h3>Miso mayonnaise<\/h3>\n<ul>\n<li>1 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Egg<\/li>\n<li>20 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Miso<\/li>\n<li>10 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Dijon mustard<\/li>\n<li>200 ml \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Vegetable oil<\/li>\n<li>\u2013\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Rice vinegar<\/li>\n<\/ul>\n<p>Combine the egg with miso and mustard. Incorporate the oil slowly using a hand blender. Season with salt and rice vinegar.<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<h3>Cauliflower pur\u00e9e<\/h3>\n<ul>\n<li>400 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Cauliflower<\/li>\n<li>50 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Turkish yoghurt<\/li>\n<li>30 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Butter<\/li>\n<li>\u00bd \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Lemon<\/li>\n<\/ul>\n<p>Cut the cauliflower into small pieces and boil it in water until soft. Drain the cauliflower and press out any excess water. Mix in a blender with yoghurt and butter to obtain a smooth pur\u00e9e. Season with salt and lemon juice.<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<h3>Marinated cucumber<\/h3>\n<ul>\n<li>\u00bd \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Gurka<\/li>\n<li>1 tsp \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Salt<\/li>\n<li>1 tsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Sugar<\/li>\n<li>50 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Water<\/li>\n<li>50 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Sour beer<\/li>\n<li>2 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Coriander roots<\/li>\n<\/ul>\n<p>Peel the cucumber and mix the peels with salt, sugar, water, sour beer and the coriander roots in a blender to obtain a green liquid. Strain and keep the liquid. Fry the chips in a sauce pan with oil at 225\u00b0C. Drain on paper towels and salt lightly.
