Mix all the dry spices together with the crushed garlic and put in a vacuum bag together with the lamb and seal. Cook the lamb in a circulator at 57\u00b0C for 45 minutes. Prior to serving: Grill the lamb and season with salt and pepper<\/p>\n<h3>Ramson Foam<\/h3>\n<ul>\n<li>300 g\u00a0\u00a0 \u00a0Butter Arla\u00ae<\/li>\n<li>25 g\u00a0\u00a0 \u00a0\u00a0 Chervil<\/li>\n<li>30 g \u00a0\u00a0 \u00a0 Ramson<\/li>\n<li>\u00bd\u00a0\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Lemon<\/li>\n<li>2 \u00a0\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Egg yolks<\/li>\n<li>50 g \u00a0\u00a0 \u00a0Double Cream Arla\u00ae<\/li>\n<li>\u2013\u00a0\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 Champagne vinegar<\/li>\n<\/ul>\n<p>Melt the butter and mix with herbs in a blender. Reduce the cream and allow to cool, mix the cream with the egg yolks and carefully pour the butter into the egg mixture whilst mixing, season with salt, lemon and champagne vinegar. Pour the mixture into a siphon, load with 2 cartridges and keep warm in a 55\u00b0C oven until serving.<\/p>\n<h3>Grated tomato and almond<\/h3>\n<ul>\n<li>3 \u00a0\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Tomatoes<\/li>\n<li>50 g \u00a0\u00a0 \u00a0Spanish Almonds<\/li>\n<\/ul>\n<p>Cut the tomatoes in half and grate them onto a tray; season with salt, pepper and sugar. Pour tomatoes into a sieve and let the liquid drain off (saving the liquid for the beans). Chop the almonds coarsely.<\/p>\n<h3>Buttery Cannellini bean<\/h3>\n<ul>\n<li>75 g\u00a0\u00a0 \u00a0\u00a0\u00a0 Cannellini beans<\/li>\n<li>1 \u00a0\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Lemon<\/li>\n<li>100 ml\u00a0\u00a0 Tomato Water<\/li>\n<li>100 ml \u00a0 Olive oil<\/li>\n<li>50 g \u00a0\u00a0 \u00a0\u00a0 Butter Arla\u00ae<\/li>\n<li>1 \u00a0\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Bay leaf<\/li>\n<li>\u00bd\u00a0\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 White onion<\/li>\n<\/ul>\n<p>Cook the beans in water with the onion until you achieve a good texture (soft, but al dente). Cut the lemons in half and grill them hard, then squeeze the juice out of them and mix with the tomato water and olive oil.<\/p>\n<p>When serving; heat the tomato water with the bay leaf, mix in the butter, season with salt and pepper, finally adding the beans.<\/p>\n<h3>Garnish<\/h3>\n<ul>\n<li>75 g\u00a0\u00a0 \u00a0\u00a0\u00a0 Sourdough Bread<\/li>\n<li>100 g \u00a0\u00a0 \u00a0Feta Cheese<\/li>\n<li>3 \u00a0\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Gem Lettuce<\/li>\n<li>50 ml\u00a0\u00a0 \u00a0Haba\u00f1ero oil<\/li>\n<li>10 \u00a0\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0 Spring onion<\/li>\n<\/ul>\n<p>Tear the bread into smaller pieces and fry well in oil and salt. Cut the feta cheese into smaller pieces. Put the gem lettuce in a vacuum bag with haba\u00f1ero oil and seal.<\/p>\n<p>Prior to serving: Take the lettuce out of the bag and season with salt, pepper and sherry vinegar.
