Pour the water into a saucepan and put the fish bones and\u00a0 all the other ingredients in except the pea shoots. Bring to a boil, reduce heat and simmer for about 30 min. Pour through a sieve, season with salt. Put the leftovers from the peas and pea shoots in a glass beaker and pour in the hot dashi before serving<\/p>\n<h3>Oyster mayonnaise<\/h3>\n<ul>\n<li>2 \u00a0\u00a0\u00a0 \u00a0Oysters<\/li>\n<li>1 \u00a0\u00a0\u00a0 Egg white<\/li>\n<li>200 ml\u00a0\u00a0\u00a0 Rapeseed oil<\/li>\n<li>\u00bd\u00a0\u00a0 \u00a0Lemon<\/li>\n<li>\u2013\u00a0\u00a0 \u00a0Salt<\/li>\n<\/ul>\n<p>Open the oysters and mix with the egg white. Slowly pour in the oil while mixing until it you achieve a smooth cream;\u00a0 season with salt and lemon.\u00a0 Pour the mayo into a piping bag and place in the fridge.<\/p>\n<h3>Quince juice baked fennel<\/h3>\n<ul>\n<li>2 \u00a0\u00a0 \u00a0Fennel bulbs<\/li>\n<li>1 tbsp\u00a0\u00a0 \u00a0Sugar<\/li>\n<li>1 tsp \u00a0\u00a0 \u00a0Salt<\/li>\n<li>200 ml \u00a0\u00a0\u00a0 Water<\/li>\n<li>1 \u00a0\u00a0 \u00a0Lemon<\/li>\n<li>1 tbsp\u00a0\u00a0 \u00a0Quince juice<\/li>\n<\/ul>\n<p>Boil water, sugar and salt, allow to cool. Pour in the quince and lemon juice. Cut the fennel in half and put in a vacuum bag. Pour in the liquid and seal the bag. Steam the bag at 100\u00b0C for about 30 minutes (or until soft). Before serving; sprinkle the cut surface with sugar and fry hard until dark brown. Cut into smaller pieces and drizzle a little olive oil and salt on top<\/p>\n<h3>Grilled cucumber<\/h3>\n<ul>\n<li>2 \u00a0\u00a0 \u00a0Cucumbers<\/li>\n<li>1 tbsp \u00a0\u00a0\u00a0 Kikkoman Soya sauce<\/li>\n<li>1 tsp\u00a0\u00a0 \u00a0Sesame oil<\/li>\n<li>1 tbsp\u00a0\u00a0\u00a0 Rice vinegar<\/li>\n<li>\u00bd\u00a0\u00a0 \u00a0Lemon<\/li>\n<\/ul>\n<p>Grill the cucumber hard. Cut into thin slices. Mix the other ingredients and dress the cucumber with it before serving<\/p>\n<h3>Garnish<\/h3>\n<ul>\n<li>1,1 kilo\u00a0\u00a0 \u00a0Pike-Perch<\/li>\n<li>300 g\u00a0\u00a0 \u00a0Peas<\/li>\n<li>\u00bc punnet\u00a0\u00a0\u00a0 Fennel-dill<\/li>\n<li>\u00bc punnet\u00a0\u00a0 \u00a0Pea shoots<\/li>\n<li>100 g\u00a0\u00a0 \u00a0Butter Arla\u00ae<\/li>\n<\/ul>\n<p>Cut the Pike-Perch into pieces, season with salt and set aside. Fry the fish in a frying pan with oil and salt generously on the skin side, flip over onto a oven tray and bake. Brown the butter and smoke it according to instruction. Shell the peas and boil in salted water.
