Cut each scallop into 5 pieces. Peel the shrimp as instructed by your chef and keep them in the fridge until serving.<\/p>\n<h3>Spinach and dill crisp<\/h3>\n<ul>\n<li>100 g\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Almond potato<\/li>\n<li>20 g\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Dill<\/li>\n<li>20 g\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Spinach<\/li>\n<li>\u2013\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Salt<\/li>\n<\/ul>\n<p>Peel the potatoes and boil them until soft. Drain them but keep the water. Mix the potatoes with dill, spinach and salt in a blender and add from the cooking water to obtain a smooth green paste. Spread the paste thinly onto a silicone sheet using the back of a spatula. Dry in the oven at 120\u00b0C until crispy.<\/p>\n<h3>Grilled shrimp emulsion<\/h3>\n<ul>\n<li>10 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Raw shrimp<\/li>\n<li>2 tbsp\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 Egg white<\/li>\n<li>\u00bd \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Lemon (juice)<\/li>\n<li>2 tbsp\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 Water<\/li>\n<li>1 tsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Dijon mustard<\/li>\n<li>100 ml \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Grilled shrimp oil<\/li>\n<\/ul>\n<p>Peel the shrimp. Mix all ingredients except for the oil with a blender. Add the oil slowly while mixing until the cream thickens. Season with salt and more lemon juice if needed.<\/p>\n<h3>Jalape\u00f1o marinated tomatillo<\/h3>\n<ul>\n<li>2 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Tomatillo<\/li>\n<li>2 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Fresh jalape\u00f1o<\/li>\n<li>100 ml\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Pickling liquid<\/li>\n<\/ul>\n<p>Slice the tomatillo thinly as instructed by your chef. Mix the jalape\u00f1o with the pickling liquid in a blender. Strain the liquid and pour it into a vacuum bag. Add the tomatillo and seal the bag. Leave to infuse until serving.
