Cut the potatoes open and scoop out the inside into a bowl. Bring the butter and milk to a boil with the potato skins. Leave to infuse for 10 minutes, then strain the liquid and pour it into the potato bowl. Press the potato mixture through a sieve. Add the sour cream and season with salt and vinegar. Keep warm until serving.<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<h3>Cod<\/h3>\n<ul>\n<li>800 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Cod \u201dSkrei\u201d<\/li>\n<li>50 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Butter<\/li>\n<li>50 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Vegetable oil<\/li>\n<li>100 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Seaweed<\/li>\n<\/ul>\n<p>Portion the fish. Melt the butter, add the oil and seaweed and vacuum seal with the fish. Bake for 30 minutes in a circulator at 48\u00b0C just before serving. If you do not have access to a circulator, place the fish in a baking dish, add the butter, oil and seaweed and bake at 100\u00b0C until a core temperature of 48\u00b0C.<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<h3>Fried mussles and mussle foam<\/h3>\n<ul>\n<li>30 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Blue mussles<\/li>\n<li>3 l \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Water<\/li>\n<li>100 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Butter<\/li>\n<li>100 ml \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Milk<\/li>\n<li>100 ml \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Flour<\/li>\n<li>2 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Eggs<\/li>\n<li>100 ml\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Panko<\/li>\n<li>\u2013\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Champagne vinegar<\/li>\n<li>\u2013\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Salt<\/li>\n<\/ul>\n<p>Rinse the mussles in cold water and remove any \u201dbeard\u201d. Bring the water to a boil and cook the mussles 1-2 minutes or until all mussles are open. Lift out the mussles from the water and extract them from the shells. Reduce the broth until 10% remains. Add butter and milk before serving and use a hand blender to make the sauce foamy.<\/p>\n<p>Bread the mussles by dipping them in flour, egg and panko. Keep them cold and deep fry before serving.<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<h3>Smoked kale<\/h3>\n<ul>\n<li>300 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Kale<\/li>\n<li>100 ml \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Vegetable oil<\/li>\n<li>50 ml \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Cherry vinegar<\/li>\n<li>50 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Butter<\/li>\n<\/ul>\n<p>Smoke the oil with a smoking gun according to instructions. (If you do not have access to a smoking gun, you can use smoked salt or liquid smoke instead). Tear the kale into smaller pieces. Combine the smoked oil with cherry vinegar. Fry the kale in butter before serving and season with the oil\/vinegar mixture.<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<h3>Glazed parsley root<\/h3>\n<ul>\n<li>5 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Parsley roots<\/li>\n<li>1 tbsp \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Honey<\/li>\n<li>30 g\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Butter<\/li>\n<\/ul>\n<p>Peel the parsley roots and cut them into pieces according to instruction. Fry the roots in oil on low heat until soft. Glaze with honey and butter just before serving.<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<h3>Garnish<\/h3>\n<ul>\n<li>5 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Potatoes<\/li>\n<li>50 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Fermented garlic cream<\/li>\n<li>20 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Bottarga<\/li>\n<li>\u2013\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Leek powder<\/li>\n<li>\u2013 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Parsley cress<\/li>\n<\/ul>\n<p>Slice the potatoes thinly on a mandoline, rinse the slices, tap dry with paper and deep fry until crispy.
