Bake the lamb sous vide at 60\u00b0C for approximately 1-1\u00bd hour. Let the lamb rest at room temperature for at least 30 minutes.<\/p>\n<p><strong>Ramson croquettes<\/strong><\/p>\n<p>500 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Almond potatoes<\/p>\n<p>50 g\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Butter<\/p>\n<p>50 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Plain flour<\/p>\n<p>100 ml\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Double cream<\/p>\n<p>150 ml\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Milk<\/p>\n<p>2\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Egg yolks<\/p>\n<p>90 g\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Svedjan hard cheese<\/p>\n<p>10 g\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Ramsons<\/p>\n<p>10 g\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Parsley<\/p>\n<p><u>Breading<\/u><br \/>\n120 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Plain flour<\/p>\n<p>2 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Eggs<\/p>\n<p>75 g\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Panko<\/p>\n<p>Boil the potatoes. Melt the butter in a saucepan and add the flour and whisk. Add the milk and cream a little at the time and whisk to a smooth batter. Pass the potatoes through a sieve and fold them into the batter. Add the egg yolks, the grated cheese and the herbs. Season with salt and pepper and chill the batter. Roll into little balls and bread in flour, whisked egg and finally in panko. Place the croquettes cold and deep fry just prior to serving.<\/p>\n<p><strong>Salt baked\/grilled yellow beets <\/strong><\/p>\n<p>10\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Yelllow beets<\/p>\n<p><u>Salt dough<\/u><\/p>\n<p>500 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Water<\/p>\n<p>550 g\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Plain flour<\/p>\n<p>250 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Salt<\/p>\n<p>90 g\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Cooking oil<\/p>\n<p>Rinse all dirt off the beets. Cover the beets with the salt dough and bake at 160\u00b0C for approximately 2 hours. Remove the dough and grill the beets gently with cooking oil so you achieve a smokey flavour. Brown them in a saucepan. Deglace the pan with white wine and add the lamb stock. Reduce the sauce by half. Cover the garlic cloves in cooking oil a saucepan and roast them. Mix to a pur\u00e9e. Season the sauce with roast garlic pur\u00e9e, fermented plum pur\u00e9e and red wine.<\/p>\n<p><strong>Ramson mayonnaise<\/strong><\/p>\n<p>20 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Ramsons<\/p>\n<p>20 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Spinach<\/p>\n<p>300 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Cooking oil<\/p>\n<p>2 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Egg yolks<\/p>\n<p>1 tbsp\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Dijon<\/p>\n<p>1 tbsp \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Champagne vinegar<\/p>\n<p>Mix ramsons, spinach and cooking oil on high effect in a blender. Pour through a fine sieve. Mix egg yolks, dijon and champagne vinegar. Add the oil in a think stream whilst constantly mixing. Season with salt.<\/p>\n<p><strong>Rapeseed sprouts<\/strong><\/p>\n<p>10\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Rapeseed sprouts<\/p>\n<p>1\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Garlic cloves<\/p>\n<p>2 tbsp \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Lemon juice<\/p>\n<p>2 tbsp \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Cooking oil<\/p>\n<p>2 tbsp \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Japanese light soy sauce (Kikkoman if available)<\/p>\n<p>Make a vinaigrette with the garlic, lemon juice, cooking oil and soy sauce. Set aside for later. Just before it\u2019s time to serve the dish, fry the rapeseed sprouts in a hot pan with a little oil. When they start to colour, toss them in the vinaigrette.<\/p>\n<p><strong>Garnish<\/strong><\/p>\n<p>3\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Yellow beets<\/p>\n<p>100 g\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Pickling liquid<\/p>\n<p>10 g \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Wood sorrel<\/p>\n<p>Spiralise the yellow beets and place in ice water. Strain off the water and let the beets dry.
