{"id":27219,"date":"2022-11-10T16:32:55","date_gmt":"2022-11-10T15:32:55","guid":{"rendered":"https:\/\/aveqia.com\/recipe\/charred-mackerel-with-ajo-blanco-smoked-grapes-grilled-broad-beans-and-lovage-oil\/"},"modified":"2022-11-10T16:32:55","modified_gmt":"2022-11-10T15:32:55","slug":"charred-mackerel-with-ajo-blanco-smoked-grapes-grilled-broad-beans-and-lovage-oil","status":"publish","type":"recipe","link":"https:\/\/aveqia.com\/en\/recipe\/charred-mackerel-with-ajo-blanco-smoked-grapes-grilled-broad-beans-and-lovage-oil\/","title":{"rendered":"Charred mackerel with ajo blanco, smoked grapes, grilled broad beans and lovage oil"},"content":{"rendered":"<h4>Serves 10 as part of a larger menu, or 4-6 if served as a main course<\/h4>\n<h4>Escabeche<\/h4>\n<ul>\n<li>2 Bay leaves<\/li>\n<li>5 g Peppercorns<\/li>\n<li>1 Shallot<\/li>\n<li>2 Garlic cloves<\/li>\n<li>100 g Olive oil<\/li>\n<li>100g Champagne vinegar<\/li>\n<li>400 g Water<\/li>\n<li>8 Dried tomatoes in oil<\/li>\n<li>8 g Salt<\/li>\n<\/ul>\n<p>Saute shallots, garlic, black pepper and bay leaves in olive oil for about 10 minutes on medium heat until the shallots are caramelized. Add the sun-dried tomatoes, vinegar, water and salt. Simmer for 10 minutes on low heat without reducing. Cool the marinade thoroughly before adding the mackerel.<\/p>\n<h4>Mackerel<\/h4>\n<ul>\n<li>3 Fresh whole Mackerel<\/li>\n<\/ul>\n<p>Fillet the fish and de-bone according to the instructions. Char the mackerel fillet with a Sivert gas burner on the skin side. Place the fillets in the marinade and infuse until it is time to serve (at least 45 min.)<\/p>\n<h4>Ajo Blanco<\/h4>\n<ul>\n<li>150 g Almonds<\/li>\n<li>1 Garlic clove<\/li>\n<li>350 g Water<\/li>\n<li>5 g Salt<\/li>\n<li>45 g Olive oil<\/li>\n<li>17 g Sherry vinegar<\/li>\n<\/ul>\n<p>Soak the almonds in water for about 3 hours. Blanch the garlic. Blitz almonds, water, salt and blanched garlic; add olive oil and sherry vinegar while mixing. Season with salt. Strain the sauce and refrigerate until it is time to serve.<\/p>\n<h4>Lovage oil<\/h4>\n<ul>\n<li>150 g Rapeseed oil<\/li>\n<li>50 g Lovage<\/li>\n<\/ul>\n<p>Blitz the lovage thoroughly in a blender with the oil. Strain and leave to serve.<\/p>\n<h4>Smoked grapes<\/h4>\n<ul>\n<li>75 g Grapes<\/li>\n<\/ul>\n<p>Cut the grapes into quarters and smoke with apple shavings.<\/p>\n<h4>Grilled broad beans<\/h4>\n<ul>\n<li>800 g Broad beans<\/li>\n<\/ul>\n<p>Peel the broad beans as shown by your chef. Cook them in a sieve over the grill and spray with olive oil using the spray bottle.
