Place the dough in a vacuum bag and seal. Leave in the fridge for 20 min. Roll out on the 2nd setting on a pasta machine and line tarte moulds. Prick the pastry with fork and place in the freezer. Bake at 150 \u00b0C for 10 min.<\/p>\n<h4>Strawberry sorbet<\/h4>\n<ul>\n<li>600 g Strawberries<\/li>\n<li>15 g Lemon juice<\/li>\n<li>50 g Sugar<\/li>\n<li>50 g Glucose syrup<\/li>\n<li>4 g Agar agar<\/li>\n<\/ul>\n<p>Remove the sprig from the strawberries and cut them into smaller pieces. Cook lemon juice, sugar, water, glucose and agar agar in a sauce pan. Add to mixer jug and add the liquid. Mix to a smooth batter. Pour the liquid into paco-jet containers and freeze in the Blastchiller 900 from Electrolux.<\/p>\n<h4>Lemon curd<\/h4>\n<ul>\n<li>50 g Lemon juice<\/li>\n<li>100 g Sugar<\/li>\n<li>70 g Butter<\/li>\n<li>2 Whole eggs<\/li>\n<li>1 Gelatine sheet<\/li>\n<\/ul>\n<p>Soak the gelatin in cold water. Simmer the lemon juice, sugar, butter and eggs to 84\u00b0C whilst whisking. Add the gelatin leaf. Strain and distribute into the tartelet moulds.<\/p>\n<h4>Cr\u00e8me with Urfa pepper<\/h4>\n<ul>\n<li>250 g Milk<\/li>\n<li>3 g Ground Urfa pepper<\/li>\n<li>50 g Granulated sugar<\/li>\n<li>15 g Corn starch<\/li>\n<li>75 g Egg yolks<\/li>\n<li>20 g Butter<\/li>\n<li>200 g Lightly whipped cream<\/li>\n<\/ul>\n<p>Boil milk and ground Urfa pepper. Pour caster sugar, cornstarch and egg yolks into a bowl and whisk. Pour in half of the pepper milk and mix. Return the batter to the saucepan and heat whilst whisking. Stir in the butter; strain. Let the cream cool under plastic wrap in an ice bath. Fold in the whipped cream just before serving.<\/p>\n<h4>Meringue<\/h4>\n<ul>\n<li>100 g Egg whites<\/li>\n<li>150 g Sugar<\/li>\n<li>25 g Freeze-dried strawberries<\/li>\n<\/ul>\n<p>Whisk egg whites and sugar over a Bain-Marie to 65\u00b0C. Whisk in the mixer until cool. Pour into a piping bag and pipe out strings on a silicone mat and dust with strawberry powder. Dry in an oven at 80 \u00b0C until completely dry.<\/p>\n<h4>Marinated strawberries<\/h4>\n<ul>\n<li>200 g Strawberries (I)<\/li>\n<li>50 g Strawberries (II)<\/li>\n<li>100 g Sugar<\/li>\n<li>200 g Water<\/li>\n<li>25 g Lemon juice<\/li>\n<\/ul>\n<p>Cut the strawberries (I) into quarters. Char the strawberries (II) with a Sivert gas burner<br \/>\nCook the roasted strawberries with sugar, water and lemon juice and reduce, mixing smoothly.<br \/>\nAllow to cool and pour over the fresh strawberries (I).<\/p>\n<h4>Garnish<\/h4>\n<ul>\n<li>1 punnet Cornflowers<\/li>\n<\/ul>\n","protected":false},"featured_media":25910,"template":"","recipe_category":[],"course":[223,224],"season":[],"class_list":["post-27222","recipe","type-recipe","status-publish","has-post-thumbnail","hentry","course-berries","course-desserts"],"acf":[],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v25.8 -
