Knead the dough on the worktop, then allow it to rest in a sealed vacuum bag in the fridge for about 20 minutes. Roll out and make the tartlets according to instructions. Bake at 180\u00b0C for about 30 minutes.<\/p>\n<h4>Chawanmushi<\/h4>\n<ul>\n<li>250 g Water<\/li>\n<li>15 g Kombu<\/li>\n<li>1 pinch Bonito flakes<\/li>\n<li>2 tbsp Soy sauce (light)<\/li>\n<li>2 tbsp Mirin<\/li>\n<li>40 g White miso<\/li>\n<li>8 g Salt<\/li>\n<li>4 Eggs<\/li>\n<li>60 g Gammelknas cheese<\/li>\n<\/ul>\n<p>Boil water, kombu, bonito flakes, soy sauce, mirin, miso and salt. Cook for 15 min, turn off the hob and allow to cool to room temperature, strain.<br \/>\nMix in the eggs. Strain again. Grate the cheese and distribute in the tarte moulds.<br \/>\nPour in the egg batter, cover the tray with plastic wrap and bake in 100\u00b0C steam for 20 min.<\/p>\n<h4>Pickled onion<\/h4>\n<ul>\n<li>15 Pickling onions<\/li>\n<li>50 g Crown dill infused pickling liquid<\/li>\n<\/ul>\n<p>Peel the onion and cut in half. Char the onions with the Sievert\u2122 gas burner.<br \/>\nJulienne the onions and place in a vacuum bag with the crown dill. Seal the bag. Leave to marinate for 40 minutes.<\/p>\n<h4>Chanterelles<\/h4>\n<ul>\n<li>300 g Chanterelles<\/li>\n<li>2 Banana shallots<\/li>\n<li>1 Garlic clove<\/li>\n<li>50 g Butter<\/li>\n<\/ul>\n<p>Clean the chanterelles according to instructions. Fry in a splash of oil until golden.<br \/>\nChop the shallots and crush the garlic. Add butter, shallots and garlic to the mushrooms in the pan and fry. Season with salt and pepper. Leave to cool until it&#8217;s time to serve.<\/p>\n<h4>Mushroom emulsion<\/h4>\n<ul>\n<li>1 Egg yolk<\/li>\n<li>15 g Champagne vinegar<\/li>\n<li>Salt<\/li>\n<li>20 g Dijon<\/li>\n<li>200 g Mushroom oil<\/li>\n<\/ul>\n<p>Mix the egg yolk with the champagne vinegar, salt and dijon mustard. Add the oil in a thin stream while mixing with a hand mixer. Season with salt and vinegar if necessary.<br \/>\nTransfer to a piping bag.<\/p>\n<h4>Pea shoot foam<\/h4>\n<ul>\n<li>50 g Spinach<\/li>\n<li>50 g Pea shoots<\/li>\n<li>200 g Water<\/li>\n<li>3 g Lecitin<\/li>\n<li>5 g Salt<\/li>\n<\/ul>\n<p>Mix the spinach, pea shoots and salt with the water. Strain into a saucepan.<br \/>\nMix in the lecithin with an immersion blender just before serving.<\/p>\n<h4>Garnish<\/h4>\n<ul>\n<li>Water cress<\/li>\n<\/ul>\n<p>Pick watercress from the stem and place in a bowl with damp paper.
