H\u00e4r serverar vi en basilika-pannacotta med fina marinerade jordgubbar. Vi toppar r\u00e4tten med poppande jordgubbsp\u00e4rlor och vit choklad-sn\u00f6. En h\u00e4rlig kolas\u00e5s f\u00e5r bidra med litet v\u00e4rme och s\u00f6tma till denna aromatiska dessert. R\u00e4cker till 10 g\u00e4ster.<\/p>\n<h3>Basilika-pannacotta<\/h3>\n<ul>\n<li>60 g Honung<\/li>\n<li>125 g Mj\u00f6lk<\/li>\n<li>250 g Gr\u00e4dde<\/li>\n<li>1 Citron<\/li>\n<li>2 Gelatinblad<\/li>\n<li>25 g Basilika<\/li>\n<\/ul>\n<p>Blanda gr\u00e4dde och mj\u00f6lk i en kastrull. Zesta citronskalet i gr\u00e4ddmj\u00f6lken. Pressa citronjuicen i honungen och koka till en karamell. V\u00e4rm samtidigt gr\u00e4ddmj\u00f6lken. Blanda honungskaramellen med gr\u00e4ddmj\u00f6lken. Bl\u00f6tl\u00e4gg gelatinbladen i kallt vatten, tills\u00e4tt och mixa med basilikan. Fyll d\u00e4refter i silikonformar och frys in.<\/p>\n<h3>Sockerkaka<\/h3>\n<ul>\n<li>250 g Socker<\/li>\n<li>225 g \u00c4ggvita<\/li>\n<li>55 g Sm\u00f6r<\/li>\n<li>60 g Mj\u00f6l<\/li>\n<li>Sm\u00f6r (till form)<\/li>\n<li>Str\u00f6br\u00f6d (till form)<\/li>\n<\/ul>\n<p>Bryn sm\u00f6ret tills det \u00e4r gyllenbrunt. Vispa socker och \u00e4ggvita till en l\u00e4tt och luftig smet. Sikta ner mj\u00f6let och v\u00e4nd f\u00f6rsiktigt ihop det med smeten. V\u00e4nd ner det brynta sm\u00f6ret och se till att smeten blir helt sl\u00e4t. Sm\u00f6ra formarna och br\u00f6a dem med str\u00f6br\u00f6d, fyll dem sedan med smeten. Bred ut resterande smet p\u00e5 en silikonmatta och baka b\u00e5da delarna i 200\u00b0C i cirka 20 minuter. Stansa sedan ut sockerkakan fr\u00e5n silikonmattan. Bryt kakorna fr\u00e5n formarna i mindre bitar och rosta dem i 150\u00b0C i cirka 20 minuter.<\/p>\n<h3>Marinerade jordgubbar<\/h3>\n<ul>\n<li>250 g Jordgubbar<\/li>\n<li>50 g Socker<\/li>\n<li>40 g Pernod<\/li>\n<li>50 g Vatten<\/li>\n<li>50 g Jordgubbspur\u00e9<\/li>\n<\/ul>\n<p>Karamellisera sockret och flambera med Pernod. Tills\u00e4tt vatten och jordgubbspur\u00e9 och koka i 2 minuter. L\u00e5t svalna. Sk\u00e4r jordgubbarna enligt instruktion. Blanda lagen med jordgubbarna.<\/p>\n<h3>Jordgubbsp\u00e4rlor<\/h3>\n<ul>\n<li>100 g Frysta jordgubbar<\/li>\n<li>50 g Socker<\/li>\n<li>50 g Vatten<\/li>\n<li>50 g Limejuice<\/li>\n<li>2,75 g Agar agar<\/li>\n<\/ul>\n<p>Koka upp jordgubbar, socker, vatten och limejuice. Passera smeten genom en finmaskig sil ner i en ny kastrull med hj\u00e4lp av en slev s\u00e5 att allt pressas igenom ordentligt. Tills\u00e4tt sedan agar agar och koka upp smeten ordentligt s\u00e5 att agarn aktiveras helt. L\u00e5t svalna n\u00e5got och droppa ner v\u00e4tskan i kall olja med hj\u00e4lp av en &#8220;nappflaska&#8221;. L\u00e5t p\u00e4rlorna s\u00e4tta sig i kall olja i frysen. Sila av f\u00f6re servering.<\/p>\n<h3>Vit choklad-sn\u00f6<\/h3>\n<ul>\n<li>50 g Vit choklad<\/li>\n<li>100 g Socker<\/li>\n<li>20 g Vatten<\/li>\n<\/ul>\n<p>Sm\u00e4lt vit choklad och h\u00e4ll i en blandarbunke. Koka socker och vatten till en sockerlag till 135 \u00b0C. H\u00e4ll f\u00f6rsiktigt ner sockerlagen i bunken under vispning.<\/p>\n<h3>Lakrits-kolas\u00e5s<\/h3>\n<ul>\n<li>100 g Gr\u00e4dde<\/li>\n<li>100 g Sirap<\/li>\n<li>50 g Socker<\/li>\n<li>2 g Flingsalt<\/li>\n<li>5 g Lakritspulver<\/li>\n<\/ul>\n<p>Koka alla ingredienser till 110 \u00b0C. L\u00e5t svalna och h\u00e4ll i spritsp\u00e5se.<\/p>\n<h3>Garnityr<\/h3>\n<ul>\n<li>1 ask Atsinakrasse<\/li>\n<\/ul>\n<h3>Vid servering:<\/h3>\n<p>L\u00e4gg pannacottan p\u00e5 den utstansade sockerkakan och l\u00e5t tina i minst 20 minuter. Spritsa kolas\u00e5sen \u00f6ver pannacottan och placera resterande ingredienser runt om.
