The light is back and spring is on its way!

March 17 – June 2

As usual, we can expect some alternating temperatures outside, but you can feel how everything lightens up as soon as the month of February is behind us! Warmer temperatures are just around the corner and we have of course been looking forward to all the fresh things that come with the spring pantry. After carefully sampling the best ingredients, we are pleased to present our tasty spring menu!

How about grilled crispy asparagus with a tare reminiscent of the Far East, crispy buttermilk waffle with bright green pea puree topped with sweetbreads, Lamb Crépinette with delicate nettles and a delicious dessert with crispy tart rhubarb and licorice lava?

Grilled white asparagus with plum glaze and ginger salsa, soy baked egg yolk, fried potatoes and asparagus hollandaise

Buttermilk waffle with roasted sweetbreads, parsley cream, sweetened green asparagus and apple syrup

Lamb tenderloin Crépinette with buttered lamb gravy, nettles, tomato and lemon jelly

Rhubarb semifreddo with baked rhubarb, licorice ganache, almonds and browned butter cake
